
My favorite dishes when camping

Who knows it? There are certain recipes or dishes that simply cannot be missed on a camping trip.
For us, the most important thing is that it not only tastes good, it also has to be quick. We're often pretty short on time because we've been at the beach or out and about for too long and then we're really hungry.
In this post, I'd like to introduce you to the dishes that I'm pretty sure we prepare at least once on vacation.
The sandwich

It doesn't sound spectacular at first, but we love it. We like to get fresh rolls for breakfast at the campsite and often have some left over. So it's a great idea to fill them for lunch. We put pretty much everything in the cool box on them. Salad and mayo are a must.
The whole thing is then usually pimped up with boiled eggs and tomato slices. É voila - the perfect lunch in hot temperatures.
What we also find practical is that it's great to take with you to the beach or if you prepare it at breakfast, it's also perfect to take with you on an excursion.
The feta and melon salad
Of course, we didn't miss out on this hype and love the refreshing salad, especially in summer. Especially in countries where watermelon tastes even better than here, you have to prepare this salad at least once on vacation.

My recipe
You can use feta or sheep's cheese for the watermelon salad. Fresh mint or sprigs from the chiller cabinet give the melon salad with feta even more freshness (a little tip - we have also crumbled some peppermint tea loosely over it if necessary). Optionally, briefly toast the pine nuts to harmonize perfectly with the fresh aroma and add a delicious crunch. If you're still missing some greenery, you can also add iceberg lettuce.
The dressing can be prepared with a little balsamic vinegar and honey as well as salt and pepper.
And if you want something a little more unusual, take lime and orange juice and a little grated lime peel. Season this mixture with honey, salt and pepper and enjoy.
Leftover bread from breakfast can also be eaten here.
Hot dogs
Our absolute children's favorite - hot dogs. The practical thing about them is that you only have to quickly heat the sausages in water and then garnish them with ketchup, mustard, pickles and fried onions to taste. Simple, but a quick thing to do, especially when the little passengers are hungry. And here too, these white campsite rolls are used again (they don't have to be the soggy hot dog rolls).
Pancakes
Who knows it? Always having bread rolls for breakfast gets boring in the long run. We have an alternative. Banana pancakes!
Now some of you are probably thinking - without a mixer and all the ingredients - how is that supposed to work? No problem - we have the solution.
And I got this tip from a dear mom friend whose children have intolerances and therefore have to cook a lot themselves on vacation.
At home, simply prepare a baking mix with all the dry ingredients and only add fresh ingredients on site. I filled everything into a screw-top jar and wrote the remaining ingredients on the jar with a sharpie.

Now some of you are probably thinking - without a mixer and all the ingredients - how is that supposed to work? No problem - we have the solution. And I got this tip from a dear mom friend whose children have intolerances and therefore have to cook a lot themselves on vacation. Simply prepare a baking mix at home with all the dry ingredients and only add fresh ingredients when you get there. I filled everything into a screw-top jar and wrote the remaining ingredients on the jar with a sharpie.
My favorite recipe for this is a spelt, buckwheat and banana mix:
For approx. 3 portions you need 100g spelt flour, 80g buckwheat flour (shred buckwheat into flour in a Thermomix or similar), 2 tsp baking powder, 3 tbsp vanilla sugar, 1 pinch of salt and optionally 3 pinches of ground cardamom. (You can prepare these ingredients at home).
Add 1 egg, 3-4 bananas (preferably ripe - mash them with a fork), 2 tbsp coconut oil (or neutral vegetable oil), 180 g almond drink or milk and (coconut) oil for frying.
After frying, the finished pancakes can be garnished with honey, grated coconut and/or sliced almonds. If you don't have a small whisk to hand, you can also use a fork.
Spaghetti with prawns (seafood)

Anyone can make spaghetti, but sometimes it's a bit boring. We love seafood and have discovered this variation for ourselves.
If we're not buying seafood at the weekly market, we take it out of the freezer at the supermarket and defrost it in warm water before quickly processing it.
It's also up to you whether you prepare the spaghetti with oil, tomato sauce or a pesto version. We then fry the seafood with a little onion and garlic and mix it into the spaghetti - delicious!
Wraps
For us, wraps are also a great „leftover recycling dish“, as there are no precise instructions on how to fill them. We particularly like to spread cream cheese and/or a sauce on the wraps before filling them. Then you can put whatever you like or have available on top.
The whole thing can be arranged as „cold cuisine“ and the wrap can be topped with salad, vegetables and ham. Or you can fry some meat or soy slices. Beans and sweetcorn always look good on the wrap. Leftover bolognese sauce always goes well with it too. Anything goes, nothing is a must - just try it out.
